Just about every afternoon, I need a chocolate fix. Just a taste to satisfy the craving and I'm good. Then there are the nights when I am looking for a deluxe chocolate cake to share with my husband in a romantic spot before dinner or to sneak with coffee first thing in the morning. Here it is! An added bonus: It's really pretty healthy to boot!
Line a pie pan with wax paper or syran wrap.
Crust:
In the Ninja
1 cup of almonds
1/2 cup of pecans
Process well then add:
1/4 cup cocoa powder
1/8 tsp salt
Process then add:
1 cup raisins
Scrap sides of Ninja as needed, processing till crumbly smooth and mixed well.
Empty Ninja into line pie pan. Press into pan.
Filling:
In a Ninja,
1/2 cup coconut oil
1/4 cup peanut or almond butter
Process then Add:
1/4 cup cocoa powder
Process then Add:
1/4 cup honey
Pinch of salt
1 TBSP vanilla
Process then add:
3/4 cup pecans
Process.
Pour on top of crust.
Top with
1/2 mini chocolate chips or chopped dark chocolate or coconut flakes or chopped nuts or a mixture of the above.
Cover with tinfoil and freeze for an hour before serving.
To serve pull out of pan and place on cutting board. Slice with a knife.
